Tortellini Pasta Salad

An easy, light pasta salad that can be made quickly and in mass. It's herby, fresh, peppered with vegetables, and will have everyone coming back for seconds.
Prep Time 20 minutes mins
Roasted Tomatoes
- 1 10 oz. package cherry tomatoes
- olive oil
- salt
- pepper
Pasta Salad
- 1 lb. tortellini
- 2 cups pesto
- 1 15 oz. can of peas
- 2 cups arugula
- 1 cup mozzarella cheese balls cut in quarters
- roasted tomatoes (see above)
Roasted Tomatoes
Preheat the oven to 400°F.
Lay out the cherry tomatoes on a baking sheet.
Drizzle with olive oil.
Season with salt and pepper.
Bake for 25 minutes.
Pasta Salad
Cook and drain your tortellini.
Combine the tortellini, pesto, peas, arugula, mozzarella, and roasted tomatoes.
Chill.
