Instructions
Making the Tofu
Using a tofu press or a different method, press your tofu block for 40 minutes.
Combine the olive oil, soy sauce, rice wine vinegar, ginger, red pepper flakes, and garlic in a flat dish that could also hold all of your tofu.
Once your tofu is done pressing, dice it into cubes.
Place the tofu cubes in your container with the marinade and stir it to make sure it is all coated. Let it sit until the tofu absorbs all of the marinade like a sponge and there is nothing left in the dish.
Lay a piece of parchment paper down on a baking sheet and lay the tofu on it in one layer.
Bake for 30 minutes at 400° F, flipping halfway through.
Making the Stir Fry Sauce
In a sauce pan, combine the soy sauce, olive oil, sugar-free honey, sugar-free brown sugar, gochujang, ginger, lemon juice, salt, and pepper.
Heat over low/medium until reduced. This should take about 5 minutes once hot.
Making the Stir Fry
Prep whatever vegetables you're using and cook your brown rice.
Heat the vegetable oil in a wok or a pan and cook your vegetables.
Add the tofu and sauce and cook it in the wok for 3-4 minutes.
Lay your brown rice down on a plate and add your vegetables and tofu from the wok on top.
Garnish with sesame seeds and enjoy!
