Sugar-Free Asian Meatballs

Healthy Asian inspired meatballs. Perfect with rice for dinner or on a toothpick at cocktail hour.

Ingredients
  

  • ¼ cup soy sauce
  • 1 T sugar-free, imitation honey
  • 1 T sugar-free brown sugar
  • 1 t gochujang
  • 1 clove garlic minced
  • ½ t ground ginger
  • 1 splash lemon juice
  • ½ lb. ground beef
  • t salt
  • t pepper
  • 2 T egg whisk it beforehand so you can measure it out with a tablespoon
  • ½ t sesame oil
  • 2 T olive oil

Instructions
 

  • Over low/medium heat, combine the soy sauce, honey, brown sugar, gochujang, garlic, ground ginger, and lemon juice. Let it cook and reduce for 5-10 minutes.
  • Combine the ground beef, salt, pepper, egg, and sesame oil. Roll into meatballs.
  • Heat olive oil in a pan over medium heat. Add meatballs and cook for about 5 minutes on each side, or until your desired doneness.
  • Drain the juice from the pan and add the meatballs and sauce into it. Cook it all together on low/medium heat for 2-3 minutes.
