Over low/medium heat, combine the soy sauce, honey, brown sugar, gochujang, garlic, ground ginger, and lemon juice. Let it cook and reduce for 5-10 minutes.
Combine the ground beef, salt, pepper, egg, and sesame oil. Roll into meatballs.
Heat olive oil in a pan over medium heat. Add meatballs and cook for about 5 minutes on each side, or until your desired doneness.
Drain the juice from the pan and add the meatballs and sauce into it. Cook it all together on low/medium heat for 2-3 minutes.
