Brown the ground pork in a pan. This usually takes about 10 minutes.
Add the shredded zucchini and carrots. Combine.
Add the soy sauce, hoisin sauce, oyster sauce, garlic, ground ginger, and white pepper. Combine and cook for 1-2 minutes.
Let cool.
Wrap in the wonton wrappers.
Heat your canola or vegetable oil in a nonstick pan over medium heat for 1-2 minutes. I typically just do a light layer of it to cover the bottom of the pan. Alternatively, you can boil them for about 2 minutes.
Add your wontons to the pan and fry for about 2 minutes on each side, or until they're golden brown. Watch them closely as they fry fast!
Repeat until all wontons are cooked.
