Chicken with Roasted Tomatoes
An easy way to utilize your garden's tomatoes. It's fresh, light, and filling. Cut corners and make this incredible meal in an extremely simple way.
- 12-16 oz. cherry tomatoes
- ¼ cup olive oil
- ¼ t salt
- ¼ t pepper
- 1 T Italian seasoning
- 2-4 breaded chicken cutlets
Preheat oven to 400° F.
Combine the cherry tomatoes, olive oil, salt, pepper, and Italian seasoning. Lay out on a baking sheet.
Bake for 25 minutes.
Cook your chicken cutlets as directed on the package.
Lay your cooked chicken onto a plate and top with the roasted tomatoes.
