Chicken Udon

The best, most simple Asian udon you'll be able to make out of your own kitchen.

Ingredients
  

Chicken

  • 1-2 chicken breasts based on how many people you're feeding. i can feed 2-4 with 1 package of noodles!
  • salt, pepper, + sesame seeds for seasoning your chicken breast. this is based on the size of your chicken, so I can't put an exact measurement!
  • 1 T canola oil

Sauce

  • 4 T soy sauce
  • 2 T vegetable or canola oil
  • 2 T honey
  • 2 T brown sugar
  • 1 T gochujang
  • 1 T ginger paste
  • ΒΌ t black pepper
  • splash of lemon juice

Other

  • veggies of your choice
  • 1 package udon noodles
  • 1 T canola oil

Instructions
 

  • Season the chicken breast with salt, pepper, and sesame seeds on both sides.
  • Heat the canola oil in a pan over medium heat.
  • Add your chicken breast and cook for 4-5 minutes on each side.

Sauce

  • Add all of the sauce ingredients to a saucepan over low/medium heat. Combine.
  • Let it cook and reduce for about 5 minutes.

Chicken Udon

  • Cook your udon noodles. If they are the pre-cooked ones (the ones I use don't need to be cooked) then skip this step.
  • Add the 1 T canola oil to a wok over medium heat.
  • Add your veggies and cook until they're charred.
  • Add your noodles to the wok and cook with the vegetables for 1 minute.
  • Add the sauce and combine it with the vegetables and noodles. Let it cook for an additional 1-2 minutes.
  • Plate it and add your chicken on top.
