Combine the flour, salt, and yeast in either a stand mixer bowl or a large bowl.
Turn your stand mixer on and slowly start adding the water. If you're doing it by hand, slowly add the water as you're mixing the dough together with a spoon.
Add the honey and olive oil.
If the dough is too wet and isn't forming into a dough, add more flour until it does. Alternatively, if it's too dry and crumbly, add more water little by little.
Cover your bowl with saran wrap or a tea towl and let it rise for 1-2 hours, or until doubled in size.
Grease a cast iron pan.
Roll your dough ball out on a floured surface until it's large enough to cover the entirety of your cast iron pan and can hang over the edges comfortably. Press the dough into the corners of your pan so you have a flat surface to work with.
Add the bleu cheese to the corners of the pan, or where the crust will be after you fold over the dough to cover the bleu cheese.
Lay the dough that is hanging over the edge of the pan over the bleu cheese. Press down the edge into the pizza crust or fold the dough around the cheese, tucking the crust underneat, creating a stuffed crust.
