Balsamic Tomato Salad

The perfect way to utilize all of your summer tomatoes. Marinated cherry tomatoes, seasoned arugula, and a sweet, but sugar-free, balsamic vinegar dressing.

- 1 cup arugula
- ½ cup cherry tomatoes halved
- 1 T olive oil
- ¼ t salt
- ¼ t pepper
- ½ ball burrata cheese
- ¼ cup balsamic vinegar
- 2 T sugar-free honey
To make the balsamic glaze dressing, add the balsamic vinegar and sugar-free honey to a saucepan over low/medium heat. Let it sit, lightly bubbling at the edges, until it's reduced by half, stirring frequently. Be careful because this can burn quickly!
Cut the cherry tomatoes in half. Add the olive oil, salt, and pepper. Stir.
In a dish, lay the arugula on the bottom. Add the cherry tomatoes and burrata cheese.
Drizzle with the balsamic glaze.
