Sweet Potato Burger

Hi, I’m Sarah, your new friend with burger-fits. The hamburger is a classic. Any way that it’s done, it’s pretty amazing. My goal this summer is to see how many different, amazing ways I can make a hamburger. While it’s awesome traditional stylez, it can get even better when you have fun with it. My start to this journey takes form in this sweet potato burger with a truffle black garlic aioli, some caramelized pancetta, a layer of sweet potatoes, and some arugula. Hope it’s everything you’ve ever wanted!

Ingredients

Burger

  • lb. ground beef
  • ¼ t sea salt
  • ¼ t pepper
  • ¼ t garlic powder
  • ¼ t rosemary

Sweet Potatoes

  • ½ sweet potato peeled
  • 1 T olive oil
  • ¼ t sea salt
  • ¼ t pepper
  • ¼ t garlic powder
  • ½ t rosemary
  • ¼ t thyme
  • ¼ t sage

Truffle Black Garlic Aioli

  • ½ cup mayonnaise
  • 1 T white truffle oil
  • 1 t truffle and black garlic seasoning I get mine at Krogers!

Caramelized Pancetta

  • ½ cup pancetta diced
  • 1 T brown sugar

Other

  • ciabatta bun
  • ¼ cup arugula

Instructions

Sweet Potatoes

  • Using a mandoline or a sharp knife, slice the sweet potato
  • Add all of the sweet potato ingredients into a bowl. Combine thourougly, making sure every sweet potato slice is coated. Sometimes I have to go in with my hands to make sure that everything is coated!
  • There are 2 ways I suggest you cook these. Ideally, these can be done in the air fryer while everything else is being made!
Air fryer – Cook for 8-10 minutes at 400° F.
Pan – Heat 1 T of canola oil in a pan over med/high heat. Add sweet potato slices and cook until soft and tender, making sure to flip them! Around 3 minutes each side.

Truffle Black Garlic Aioli

  • Combine all ingredients. Chill.

Caramelized Pancetta

  • Add the diced pancetta and brown sugar to a pan over medium heat. Combine.
  • Cook for aroud 4-5 minutes or until the brown sugar has a chance to caramelize, darken, and crisp the pancetta. Stir often!

Burger

  • Combine all of the burger ingredients. Form into them into your ideal patty size.
  • Heat your grill.
  • Cooking your hamburger is very personal. It all depends on the size, shape, and your desired doneness level. I prefer mine on the medium rare side so I'll tell how I do mine and add tips and tricks if you like something with more doneness.
  • Place your burger patty on the grill. Cook for 3 minutes.
  • Rotate your burger 90°. Cook for 3 more minutes.
  • Flip burger. Cook for 3 more minutes.
  • Rotate your burger 90° one more time. Cook for another 3 minutes. Done!
  • If you prefer something with more doneness, I would add 1-3 minutes to each cooking phase! Also, making a thinner patty helps cook the burger faster.
  • While the grill is on and still hot, toast your ciabatta buns on it. About 3 minutes.

Assembly

  • Bottom bun, truffle black garlic aioli, arugula, burger patty, sweet potatoes, pancetta, top bun with more truffle black garlic aioli spread on it.
