Gluten-Free Sugar-Free Low-Carb Superman Tart
This is a labor of love. And most of the labor is cleaning up the huge mess it makes. Granted, maybe I’m just a messy, chaotic cook, but this dessert is best made with a clean-up crew. If you’re from Michigan, you know exactly what superman ice cream is. I mean, maybe you don’t know exactly what it is, because I think that recipe is under lock and key, but you can take your best guess on what it is. I have no clue, so I just made a vanilla tart and dyed it superman colors, as a real chef does. If you want to save yourself the trouble, you can totally omit that step! Either way, it’s an amazing healthy dessert that will impress anyone.
Sugar-Free Low Carb Superman Tart
Michigan babies unite. This sugar-free low-carb tart carries notes of vanilla and almond and is the perfect healthy topper to any day of eating.
Ingredients
Tart Crust
- 1 ¾ cups almond flour
- ½ cup coconut flour
- 2 eggs
- 4 T butter melted
- 1 T Splenda
- ½ t salt
Filling
- 8 oz. cream cheese I use Kite Hill dairy-free cream cheese
- ½ cup heavy cream
- 2 t vanilla
- ¼ cup Splenda
Instructions
- Preheat oven to 350° F.
- Mix the almond flour, coconut flour, eggs, butter, Splenda, and salt in a food processor. Pulse until it forms a dough.
- Press the mix into your tart pan. Make sure it's spread evenly. It would work in a 9 or 11 inch tart pan!
- Bake for 16-17 minutes.
- In a bowl, add the cream cheese, heavy cream, vanilla, and Splenda. Using a beater, cream together.
- Add the tart filling to the tart crust.
