Sugar-Free Gluten-Free Low-Carb Peanut Butter Cookies
Who has two thumbs and hates peanut butter? This girl. Who has two thumbs and loves these cookies? Also this girl. There are certain flavors that I really don’t like but I’ll never be the girl who turns something amazing down just because there’s an ingredient I don’t like in it. These cookies are sugar-free, low-carb, low-cal, and packed with protein because of the peanut butter. They’re also as simple as can be and you’re going to love them so much! Scout’s honor.
Sugar-Free Low-Carb Peanut Butter Cookies
These healthy peanut butter cookies taste just like the real thing minus all of the sugar. Eat these like candy, because you can!
Ingredients
- ½ cup coconut flour
- ¾ cup Splenda
- 1 cup peanut butter
- 3 eggs
- ¼ t sea salt
- 1 t vanilla extract
Instructions
- Preheat oven to 350° F.
- Line a baking sheet with parchment paper.
- Mix all of the ingredients until well combined and a dough has formed.
- Place 1 T sized balls of dough on the baking sheet about 1 inch apart.
- Flatten cookies slightly by making a criss-cross mark on the cookies with a fork.
- Bake for 15-17 minutes or until the edges are golden.
