Gluten-Free Sugar-Free Gingerbread Cookies

Ingredients
- 1 ¼ + 1 T cup almond flour
- 2 T coconut flour
- 1 ½ t baking powder
- ¼ t sea salt
- ⅓ cup sugar-free brown sugar I use Truvia
- 3 T sugar-free maple syrup
- 5 ½ T butter sub vegan butter for dairy-free
- ¼ t vanilla extract
- 1 egg sub 1/4 cup unsweetened applesauce for dairy-free
- 1 ½ t cinnamon
- ½ t clove
- 1 t ground ginger
- ½ t nutmeg
Instructions
- Preheat the oven to 325° F.
- With a hand mixer, stand mixer, or whisk, cream butter (sub vegan butter for dairy-free) and brown sugar until well combined.
- Add the egg (sub unsweetened applesauce for dairy-free), vanilla extract, and maple syrup and mix until well combined.
- In a separate bowl, combine almond flour, coconut flour, baking powder, sea salt, cinnamon, clove, ginger, and nutmeg.
- Sift in the dry ingredients to the wet ingredients and mix until well combined.
- Place 1 T sized spoonfuls about 1 inch apart on a baking sheet lined with parchment paper.
- Bake 14-16 minutes, or until golden brown on the bottom.
