Sugar-Free Gingerbread Cookies

Ingredients
  

  • 1 ¼ + 1 T cup almond flour
  • 2 T coconut flour
  • 1 ½ t baking powder
  • ¼ t sea salt
  • cup sugar-free brown sugar I use Truvia
  • 3 T sugar-free maple syrup
  • 5 ½ T butter sub vegan butter for dairy-free
  • ¼ t vanilla extract
  • 1 egg sub 1/4 cup unsweetened applesauce for dairy-free
  • 1 ½ t cinnamon
  • ½ t clove
  • 1 t ground ginger
  • ½ t nutmeg

Instructions
 

  • Preheat the oven to 325° F.
  • With a hand mixer, stand mixer, or whisk, cream butter (sub vegan butter for dairy-free) and brown sugar until well combined.
  • Add the egg (sub unsweetened applesauce for dairy-free), vanilla extract, and maple syrup and mix until well combined.
  • In a separate bowl, combine almond flour, coconut flour, baking powder, sea salt, cinnamon, clove, ginger, and nutmeg.
  • Sift in the dry ingredients to the wet ingredients and mix until well combined.
  • Place 1 T sized spoonfuls about 1 inch apart on a baking sheet lined with parchment paper.
  • Bake 14-16 minutes, or until golden brown on the bottom.
