Shaved Brussels Sprouts Salad
Your new favorite salad. Lettuce is out, shaved brussels sprouts are in. I personally hate romaine. If I have a salad, I need mixed greens, kale, spinach…pretty much anything that’s green and not romaine or iceberg lettuce. Who even decided that those were the superior salad leaves, anyway? Because I definitely have a bone to pick with them. This salad is killer. It’s light, easy, and a little sweet paired with a little savory. You’re guaranteed to love, but if you don’t, please don’t let me know.
Shaved Brussels Sprouts Salad
Chopped brussels sprouts, sweet toasted nuts, honey dijon balsamic dressing…all of the makings for a perfect salad.
Ingredients
- 1 lb. brussels sprouts
- 2 T olive oil
- ¼ t sea salt
- ¼ t pepper
- ½ cup roasted nuts recipe linked below!
- ¼ cup grated parmesan cheese
- honey dijon balsamic dressing recipe linked below!
Instructions
- Put the ends off of the brussels sprouts and peel of the outer layer. Using a food proccesor, mandoline, or sharp knife, finely chop the brussels sprouts.
- In a bowl, toss the shaved brussels sprouts, olive oil, salt, pepper, roasted nuts, and parmesan cheese.
- Serve with the honey dijon balsamic salad dressing on the side.
