Savory Thanksgiving Muffins

Ingredients
  

Mashed Potatoes

  • 4 potatoes peeled
  • ½ cup butter one stick
  • ½ cup sour cream at room temperature
  • 1 cup half and half at room temperature
  • 4 t salt
  • ½ t pepper

Honey Butter

  • ½ cup butter one stick, softened
  • 3 T honey

Other

  • Canned biscuits Serving size is up to you! This recipe typically makes 10-12
  • sliced cheese of your choice
  • Frozen popcorn chicken Alternatively, you can make your own from scratch, but I like to save time here!
  • 1 jar or packet gravy
  • fresh rosemary chopped

Instructions
 

Mashed Potatoes

  • Cut potatoes into ½ inch to 1 inch slices. Add them to a large pot.
  • Add cold water over the potatoes until they are all submerged into the water. Bring to a boil.
  • Cook for 25-30 minutes. Until they're fork tender.
  • Drain the potatoes from the water. Add them to the bowl of a stand mixer, or alternatively, add them to a large bowl. You can use a hand mixer, potato ricer, or mash them by hand if you don't have a stand mixer.
  • Add the butter to the potatoes and let it melt.
  • While it is melting, combine the sour cream and half and half.
  • Add half of the sour cream/half and half mixture, salt, and pepper to the potatoes.
  • Whip potatoes and add more of the sour cream/half and half mixture until they're your desired consistency.

Honey Butter

  • Combine all honey butter ingredients.

Muffin Assembly

  • Preheat your oven to what the directions on your can of biscuits instruct.
  • Grease a muffin tin.
  • The individual biscuits should be layers of dough. Using your hands you should be able to pull apart those layers, creating 3 pieces of dough. Layer your slices of cheese in between those layers. Add the reconstructed biscuit to the muffin tin. Cook according to the can's directions.
  • Cook your popcorn chicken.
  • Add your honey butter to the top of the cooked biscuits.
  • Add a scoop of the mashed potatoes to the top of the biscuits.
  • Stick a couple of pieces of popcorn chicken to the mashed potatoes.
  • Top with gravy.
  • Sprinkle with rosemary.

Notes

  • When adding salt and pepper to the mashed potatoes, feel free to add any other herbs you’d like!
  • This mashed potato recipe also stands good on its own, so feel free to use that if you’re looking to make mashed potatoes 😁
  • If you don’t like rosemary, topping these with chives is also a great option.
  • For the popcorn chicken – I just use frozen. You can make your own at home or, sometimes, you can even get it fresh from your grocery store’s deli.
  • If you want to take another shortcut – premade or packaged mashed potatoes is fine 😋 This will save time.
