Roasted Tomato Feta Sauce
This recipe is 7 ingredients and is so extremely versatile, easy, and inexpensive, you can find new ways to eat it every day. Sometimes, my favorite meals are the ones where you can just throw every ingredient in a pan and throw it in the oven without worrying about it. This can be used as a pasta sauce, chicken sauce, shrimp sauce, or a dip for bread and crackers!
Roasted Tomato Feta Sauce
Roasted tomatoes and feta cheese are the perfect pair. If you're not a fan of feta, feel free to substitute it with something like goat cheese or halloumi! Put this on pasta, chicken, or use it as a dip. The possibilities are endless!
Ingredients
- 1 block feta cheese
- 1-2 packages cherry tomatoes
- ½ cup olive oil
- 4-5 cloves garlic minced
- salt
- pepper
- ¼ cup fresh basil, chopped or 1 T basil flakes
Instructions
- Preheat your oven to 400° F.
- In a baking dish, place your block of feta cheese in the middle and add your cherry tomatoes around it.
- Pour the olive oil over everything, add the garlic, and season the entire dish with salt and pepper. Stir the cherry tomatoes to coat them.
- Bake for 40 minutes.
- Let it cool. Add basil
- If you're using it as a sauce, use a spoon to break up the tomatoes and feta and mix everything together. Add your cooked noodles, chicken, etc. directly to the dish!
