Pulled Pork Loaded Fries

I’m one of the few that would rather spend their Sundays completely avoiding the TV and doing absolutley anything else besides watch football. That being said, it makes me a great person to spend a Sunday with because my day is usually spent in the kitchen experimenting and creating all things gluttonous. These pulled pork fries are perfect for game day or any party. They can be made in an extremely simple way or you can take my personal approach and make every component from scratch. Either way, they’ll be a hit!

Pulled Pork Loaded Fries

Make room for this mouth-watering appetizer. Everything here is made from scratch but you're always more than welcome to sub for certain pre-made items if you don't have the time! Depending on which methods you use, the time it takes to complete this may vary.

Equipment

  • oil thermometer
  • pressure cooker or slow cooker (make-shift slow cooker also works)

Ingredients
  

Pulled Pork

  • 3 lb. pork shoulder or another cut of pork
  • ½ cup chicken broth
  • 1 T olive oil
  • 3 cloves garlic minced
  • 1 t salt
  • 1 t cumin
  • 2 t coffee grounds
  • ½ t black pepper
  • ¾ cup barbeque sauce of your choice

French Fries

  • 8-9 potatoes
  • 2 T olive oil
  • salt
  • pepper
  • paprika
  • vegetable or canola oil

White Queso

  • ½ cup heavy whipping cream
  • ½ cup sour cream
  • ¼ cup mozzarella cheese
  • ¼ cup white cheddar cheese
  • ¼ cup american cheese
  • 1 T dijon mustard
  • salt and pepper

Other

  • 3-4 green onions sliced
  • ¾ cup mozzarella cheese

Instructions
 

Pulled Pork

  • Combine the olive oil, garlic, salt, cumin, coffee grounds, and black pepper.
  • Coat pork on all sides with the mixture.
  • Pour the chicken broth into either the slow cooker or pressure cooker and place pork in with it. If the pork isn't almost entirely submerged in the broth, add more until it is.
  • If you're using a pressure cooker, cook for 15 minutes. If you're using a slow cooker, cook on low for 6-7 hours.
  • Drain the broth and shred the pork.
  • Add the barbeque sauce and combine.

French Fries

  • Peel potatoes and cut them into whatever french fry shape you'd like.
  • Soak them in water for at least half an hour, the longer the better.
  • Heat your vegetable oil to 300° F.
  • Fry your potatoes for about 5 minutes or until they are very lightly golden brown. Take them out and place them on a plate or baking sheet lined with paper towel. Make sure not to overcrowd whatever you are using to cook them.
  • Raise the temperature to 375° F.
  • Cook the potatoes again for 2-3 minutes or until they are golden and crispy. Once again, place them on a plate or baking sheet lined with a paper towel.
  • Toss the french fries in olive oil, salt, pepper, and paprika. There are no measurements so that you can season them to your own taste.

White Queso

  • Add all of the queso ingredients to a saucepan over low/med heat and combine.
  • Let it cook for 5-10 minutes, stirring often. Watch the consistency and add what you need to it to make it your desired texture (e.g. If it's too thin, add more cheese. If it's too thick, add more heavy cream.)

Assembling the Pulled Pork Loaded Fries

  • Layer your french fries on the bottom of an oven-safe pan or baking sheet.
  • Layer your pulled pork on next.
  • Top everything with your queso.
  • Sprinkle the 3/4 cup mozzarella and green onions on top.
  • Place the pan under the broiler and let it cook for 3-4 minutes or until the cheese gets bubbly and golden. Watch to make sure it doesn't burn. Alternatively, if you have a kitchen torch, you can use that, too!

Notes

If you don’t want to be overwhelmed by all of the cooking that is involved with this dish, you can always get pre-made french fries, queso, or pork at the store to save time on 1 or 2 components!
