Potato Stacks

Easy and delicious. What more could you want? This side dish is so simple, and you can just pop it in the oven after you prep it so you can cook your main dish. The thin layers create a flaky, crispy crust while leaving the inside soft and melt in your mouth.

Ingredients
  

Potato Stacks

  • 3-4 potatoes
  • 2 T olive oil
  • ¼ t salt
  • 1 t parsley flakes
  • 1 t garlic powder
  • ¼ cup parmesan cheese

Sweet Potato Stacks

  • 2 sweet potatoes
  • 2 T olive oil
  • ¼ t salt
  • ½ t pepper
  • 1 ½ T rosemary flakes
  • 1 t garlic powder
  • ½ t sage
  • ½ t thyme

Instructions
 

  • Preheat the oven to 500° F.
  • Grease a muffin tin.
  • Peel your potatoes and thinly slice them using a mandolin or a very sharp knife.
  • Put your sliced potatoes in a large bowl.
  • In your bowl, add all of the ingredients and combine. Make sure that all of your potatoe slices get the seasoning mixture on them!
  • Layer your potato slices in your muffin tin.
  • Bake in the oven for 23-27 minutes. Every oven runs differently so it's important to keep an eye on them to make sure they don't burn! The sweet potatoes will cook faster than the normal potatoes.

Notes

The method is completely the same for both the sweet potatoes and the normal potatoes except for the cooking time. The sweet potatoes will cook faster which is why there is such a broad range when it comes to the cooking time!
