Low-Carb Mozzarella Stick Sandwich
A mozzarella stick…but bigger. How has no one ever thought of this before? I mean, I know I’m innovative but how did this meal take so long to bless the people? I should be the one apologizing for taking so long. This will satisfy all mozzarella stick cravings and it’s so easy to make at home. 10 minutes, TOPS. And did I mention it’s actually kind of healthy (ish)? If you don’t want it to be modified, dive right into whatever ingredients you want! But if you’re looking to cut carbs a little, then this exact recipe will be perfect for you.
Low-Carb Mozzarella Stick Sandwich
A mozzarella stick but bigger. A mozzarella stick you can have for lunch. Low-carb and easy to make.
Ingredients
- 2 slices low-carb bread I have some of my favorites linked in Mick's List but it's realitively easy to find a low-carb bread brand at the store!
- mozzarella cheese sliced or grated
- 1 egg
- 1/2 cup almond flour or breadcrumbs!
- 1/4 t salt
- 1/4 t pepper
- 1 t italian seasoning
- 2 T olive oil
- marinara sauce for dipping
Instructions
- Sandwich desired amount of mozzarella cheese in between 2 slices of bread.
- Heat in the microwave for 20 seconds, to lightly melt the sandwich together.
- Set out 2 separate dishes. In one, crack and whisk the egg. In the other, combine the almond flour or breadcrumbs, salt, pepper, and Italian seasoning.
- Coat the sandwich in the egg. Then, dip it into the breadcrumb mixture, flipping it to make sure it's thoroughly coated on all sides.
- Heat the olive oil in a pan over medium/high.
- Fry until golden on all sides. It should only take 1-2 minutes per side.
- Serve with marinara sauce.
