Lemon Pasta Salad

Ingredients
  

  • 1 lb. pasta noodles
  • ¼ cup olive oil
  • zest of one lemon
  • juice of one lemon
  • 2 T white wine vinegar
  • 1 t dijon mustard
  • 1 t oregano
  • ½ t salt
  • ½ t pepper
  • ½ cup pine nuts
  • 2 cups arugula
  • ½ cup parmesan cheese grated

Instructions
 

  • Cook the pasta noodles according to the directions on the package.
  • While the pasta noodles are cooking, make the salad dressing. Combine the olive oil, lemon zest, lemon juice, white wine vinegar, dijon mustard, oregano, salt, and pepper.
  • Add the pine nuts to a pan over low/medium heat. Toast for 1-2 minutes, or until golden.
  • To assemble the salad, combine the cooked pasta noodles, dressing, toasted pine nuts, arugula, and parmesan cheese in a large bowl.
  • (Optional) Top the salad with extra lemon zest, parmesan cheese, and black pepper.
