Cook the pasta noodles according to the directions on the package.
While the pasta noodles are cooking, make the salad dressing. Combine the olive oil, lemon zest, lemon juice, white wine vinegar, dijon mustard, oregano, salt, and pepper.
Add the pine nuts to a pan over low/medium heat. Toast for 1-2 minutes, or until golden.
To assemble the salad, combine the cooked pasta noodles, dressing, toasted pine nuts, arugula, and parmesan cheese in a large bowl.
(Optional) Top the salad with extra lemon zest, parmesan cheese, and black pepper.
