Lemon Blueberry Breakfast Bars

The combination of lemon and blueberry is perfect for those moments you want to eat your fruit as it's surrounded by delicious sponge and sugar.

  • 8 x 8 baking dish

Ingredients
  

  • 1 stick butter softened
  • 1 lemon zested
  • 1 cup sugar
  • 1 egg
  • 1 t vanilla extract
  • 2 cups flour
  • 2 t baking powder
  • 2 t sea salt
  • 1 ½ cup blueberries
  • ½ cup buttermilk

Instructions
 

  • Preheat oven to 350° F.
  • Using a stand mixer, hand mixer, or whisk, combine the butter, lemon zest, and sugar.
  • Add the egg and vanilla extract and mix until combined.
  • Toss the blueberries in enough flour to lightly coat them. This helps them distribute throughout the batter.
  • In a separate bowl, combine the flour, baking powder, and salt.
  • Add your flour mixture and buttermilk to your butter mixture and use a spatuala to fold together and combine.
  • Add your blueberries and carefully fold them in with a spatula to combine.
  • Grease an 8 x 8 baking dish.
  • Pour your batter into the dish and spread it evenly.
  • Sprinkle the top of your batter with sugar.
  • Bake for about 40-45 minutes. Use a toothpick to check if it's done.

Notes

 – You can use frozen blueberries in place of fresh ones and they do not need to be thawed before using!
 – If you don’t have buttermilk you can make you’re own by combining 2 tsp. of vinegar or lemon juice and 1/2 cup of milk and letting it sit for 5 minutes.
