Healthy Korean Chicken Bowl
In 2023, just like everyone else, I’m working on eating better. But, another one of my goals is to be more mindful of my general wellness. One thing that encompasses is having better time management, and having better time management means not spending hours in the kitchen. 30-minute meals are perfect because you can’t convince yourself that “DoorDash will be quicker” because we’re lying to ourselves. It isn’t. This bowl is healthy, gluten-free, and sugar-free, and can be made low-carb if you substitute cauliflower rice with brown rice. You do you. Healthy Korean Chicken Bowl
Low-carb, sugar-free, gluten-free Korean chicken bowl.
Ingredients
Chicken
- 2-3 chicken breast
- 2 T canola oil
- 1 T sesame oil
- 2 T low-sodium soy sauce or tamari
- 1 T gochujang
- 2 T sugar free brown sugar
- 1 t chili powder
- 1 t ground ginger
- 1 t garlic powder
Other
- 1 cup brown rice
- vegetables of your choice When trying to make things quickly, vegetable steamer bags are your best friend.
Instructions
- Dice your chicken.
- Combine the canola oil, sesame oil, soy sauce, gochujang, brown sugar, chili powder, ground ginger, and garlic powder.
- Combine the diced chicken and sauce.
- Start cooking your rice and vegetables according to the package.
- Add the chicken to a pan over medium heat. Cook for 10 minutes, stirring every so often.
- Add the rice, vegetables, and chicken to a bowl.
