Healthy, Gluten-Free, Low-Carb KFC Famous Bowl
So, you all are obviously going to love this one. It might be a little more work than some of you may like but it’s 100% worth it. Scout’s honor. To make this American delicacy healthy, I made these swaps:
- Popcorn chicken —> almond flour breaded chicken nuggets
- Mashed potatoes —> cauliflower mash
- Normal gravy —> sugar-free gravy
The majority of the work comes from breading and cooking the chicken nuggets. The rest I honestly usually just buy pre-made at the store and use. These days, dinner for me is more so whatever I can get done as quickly as possible, so I’m becoming a little bit keen on shortcuts (please don’t tell.) For what it is, this is an absolutely fantastic meal. I hope you think the same.
Healthy, Gluten-Free, Low-Carb KFC Famous Bowl
A healthy version of the American delicacy that is the KFC famous bowl. Mashed potatoes, popcorn chicken, cheese, gravy, and corn included.
Ingredients
Popcorn Chicken
- 2 chicken breasts
- 1 ½ cup almond flour
- ½ t salt
- ½ t pepper
- ½ t paprika
- ¼ cup canola oil for frying
Other
- 1 20 oz. frozen cauliflower mashed potatoes I like Bird's Eye and Green Giant`
- 1 15 oz. can of corn
- ½ cup Heinz gravy
- 1 cup cheddar cheese
Instructions
Popcorn Chicken
- Dice the chicken breasts into cubes.
- Crack the eggs in a shallow dish. Whisk well.
- Add the almond flour, salt, pepper, and paprika into a separate shallow dish. Combine.
- Coat a cubed chicken piece in the egg. Next, coat it in the almond flour breading. Repeat until all chicken is breaded.
- Heat the canola oil in a frying pan over low/medium.
- Add a layer of your chicken to the pan, making sure not to overcrowd it. Fry for 2-3 minutes on each side, or until golden brown and cooked through. Keep an eye on it and adjust the temperature of your burner as needed.
- Place them on a dish lined with paper towel.
Gravy
- Add the gravy and ¼ cup of water to a saucepan over low/medium heat. Bring it to a boil, and reduce it to a simmer for 10 minutes.
Assembly
- Cook your cauliflower mashed potatoes as directed on the package.
- In a bowl add a layer of cauliflower mashed potatoes. For assembling your bowl, add as much of each component as you'd like depending on your appetite and how many people you're feeding. This exact recipe fed 3 people.
- Add the fried chicken to the bowl.
- Top with gravy, corn, and cheese.
