Egg Drop Soup
Happy day 1 of my 10 days of healthy living! Many people start off the new year with the goal of living a more healthy lifestyle. I have spent the last 7 years creating and perfecting recipes that taste amazing while still meeting strict regiments of eating. As a self-diagnosed picky eater, I have made sure that the tastes in these foods make it easy to transition to a new style of eating.
Egg Drop Soup
This incredibly easy and healthy soup will hit the spot when you don't have the time to make a huge meal. The Asian flavors don't come at a price and this soup can be enjoyed across many different healthy lifestyles.
Ingredients
- 4 cups chicken broth or whatever broth you have on hand
- 1 t ground ginger
- 1 T soy sauce
- 2 eggs beaten
- ¼ cup green onions chopped
- salt
- pepper
Instructions
- Add broth, ginger, and soy sauce to a saucepan. Bring to a simmer.
- Slowly stream in the beaten eggs while stirring the soup in one direction.
- Add green onions, salt, and pepper.
