Chicken with Roasted Tomatoes

If you’re like me, you have more tomatoes than you know what to do with this Summer. I have about 1 million tomato and cherry tomato plants in my garden. I pretty much turn into a tomato during the Summer because I eat them so much. This is an easy way to utilize that excess and elevate your dinner. I get these seriously amazing, healthy pre-breaded chicken cutlets at Target. I eat them like candy. Tell people you came up with this recipe from your heart. It’s a seriously simple way to impress people. I never said you had to tell people that you used my recipe.

Chicken with Roasted Tomatoes

An easy way to utilize your garden's tomatoes. It's fresh, light, and filling. Cut corners and make this incredible meal in an extremely simple way.

Ingredients
  

  • 12-16 oz. cherry tomatoes
  • ¼ cup olive oil
  • ¼ t salt
  • ¼ t pepper
  • 1 T Italian seasoning
  • 2-4 breaded chicken cutlets

Instructions
 

  • Preheat oven to 400° F.
  • Combine the cherry tomatoes, olive oil, salt, pepper, and Italian seasoning. Lay out on a baking sheet.
  • Bake for 25 minutes.
  • Cook your chicken cutlets as directed on the package.
  • Lay your cooked chicken onto a plate and top with the roasted tomatoes.
