Chicken Udon
I LOVE the holidays. More than the average person. But, after getting so into it this past November, your girl needs a day or two break from these holiday flavors. I need to prepare my palette for all of the gingerbread and peppermint that is about it come it’s way by breaking up my meals with Asian and American dishes. This udon is the perfect palette breaker. Take a break from the soups and pastas and roasted everything to give yourself some straight-up fun. The sauce is what pulls everything together. I always make batches of it and give it to my friends and family because they love it so much. It’s also so simple and only has a few ingredients, which I always have in my house. I really hope you’ll try it!
Chicken Udon
The best, most simple Asian udon you'll be able to make out of your own kitchen.
Ingredients
Chicken
- 1-2 chicken breasts based on how many people you're feeding. i can feed 2-4 with 1 package of noodles!
- salt, pepper, + sesame seeds for seasoning your chicken breast. this is based on the size of your chicken, so I can't put an exact measurement!
- 1 T canola oil
Sauce
- 4 T soy sauce
- 2 T vegetable or canola oil
- 2 T honey
- 2 T brown sugar
- 1 T gochujang
- 1 T ginger paste
- ¼ t black pepper
- splash of lemon juice
Other
- veggies of your choice
- 1 package udon noodles
- 1 T canola oil
Instructions
- Season the chicken breast with salt, pepper, and sesame seeds on both sides.
- Heat the canola oil in a pan over medium heat.
- Add your chicken breast and cook for 4-5 minutes on each side.
Sauce
- Add all of the sauce ingredients to a saucepan over low/medium heat. Combine.
- Let it cook and reduce for about 5 minutes.
Chicken Udon
- Cook your udon noodles. If they are the pre-cooked ones (the ones I use don't need to be cooked) then skip this step.
- Add the 1 T canola oil to a wok over medium heat.
- Add your veggies and cook until they're charred.
- Add your noodles to the wok and cook with the vegetables for 1 minute.
- Add the sauce and combine it with the vegetables and noodles. Let it cook for an additional 1-2 minutes.
- Plate it and add your chicken on top.
