Chicken Piccata
Do you have 15 minutes? Okay, awesome, then you have enough time to make this chicken piccata. Chicken piccata is typically a pretty healthy meal, but, beware, most of the time restaurants dredge it in flour before cooking it. The sticky thing about that is that you usually can’t tell that they’re doing that, because it comes out looking like a normal piece of grilled chicken. If you’re ever worried about it, just ask your server, or just stay in and make this version yourself.
Chicken Piccata
A quick, simple chicken piccata that packs enough flavor to impress your tastebuds.
Ingredients
- 2 chicken breasts
- salt
- pepper
- italian seasoning
- garlic powder
- 2 T butter
- 1 T olive oil
- ¼ cup white wine
- 2 T lemon juice
- 2 T capers
- ¼ cup heavy cream
Instructions
- Slice your chicken breasts in half through the middle, creating 4 thin breasts in total.
- Season the chicken breasts with the salt, pepper, Italian seasoning, and garlic powder.
- Heat the butter and olive oil in a pan.
- Add the chicken and cook for 4 minutes on each side.
- Take the chicken out of the pan.
- Add the white wine to the pan the chicken was in, making sure to scrape up all of the brown bits on the bottom of the pan. Let it cook for 2 minutes.
- Add the lemon juice, capers, and heavy cream. Combine completely. Let it cook for 1 minute.
- Add the chicken back to the pan and let it all cook together for 1-2 minutes.
