Balsamic Tomato Salad

Do you have an extreme excess of tomatoes now that garden season is finally at its peak? Because same. It’s not hard for me to figure out what to do with them because, duh, tomatoes are everything to me but I can totally get why one can be intimidated. Aside from canning them, I seriously put them in every meal, like this basic and simple balsamic tomato salad. This can be enjoyed by everyone because it’s not the typical not-so-desirable salad ingredients. Hope you love her!

Balsamic Tomato Salad

The perfect way to utilize all of your summer tomatoes. Marinated cherry tomatoes, seasoned arugula, and a sweet, but sugar-free, balsamic vinegar dressing.
Prep Time 10 minutes
Course Salad, Side Dish

Ingredients
  

  • 1 cup arugula
  • ½ cup cherry tomatoes halved
  • 1 T olive oil
  • ¼ t salt
  • ¼ t pepper
  • ½ ball burrata cheese
  • ¼ cup balsamic vinegar
  • 2 T sugar-free honey

Instructions
 

  • To make the balsamic glaze dressing, add the balsamic vinegar and sugar-free honey to a saucepan over low/medium heat. Let it sit, lightly bubbling at the edges, until it's reduced by half, stirring frequently. Be careful because this can burn quickly!
  • Cut the cherry tomatoes in half. Add the olive oil, salt, and pepper. Stir.
  • In a dish, lay the arugula on the bottom. Add the cherry tomatoes and burrata cheese.
  • Drizzle with the balsamic glaze.
