20 Minute Chicken Lo Mein
This is what I like to call my “Guy’s Grocery Games” lo mein. This is what I make when I’m not sure what ingredients I have in the house but I know I’m hungry. Believe it or not, most people almost always have some variation of ingredients that they need to make a lo mein or a stir fry. They’re extremely versatile and simple and can be make in so many different ways. This recipe will show you just how stress free it can be!

20 Minute Chicken Lo Mein
This lo mein is basically everything but the kitchen sink. It combines whatever you have in the house at the time to make a quick, filling dish.
Ingredients
Chicken
- 2 chicken breasts cubed
- ¼ t salt
- ¼ t pepper
- ½ t garlic powder
- ½ T sesame seeds
- 3 T vegetable oil
Lo Mein
- 1 package noodles My favorites to use are udon noodles or standard lo mein noodles but when I'm in a pinch I use spaghetti noodles or 2 packages of ramen noodles.
- 2 T vegetable oil
- 3 cloves garlic minced
- your favorite vegetables
- 1 T gochujang or a spicy Asian alternative such as sriracha, garlic chili paste, etc.
- 1 T honey
- 2 T soy sayce
- ½ T rice wine optional
Instructions
- Pre-cook whatever noodles you're using.
- Combine your cubed chicken, salt, pepper, garlic powder, and sesame seeds.
- In a small bowl, combine the gochujang, honey, soy sauce, and rice wine.
- Heat vegetable oil in a wok or a pan and add chicken. Cook for 5-7 minutes, or until lightly golden. Set aside.
- In the same wok or pan, add the other 2 T of vegetable oil and garlic. Cook for 1-2 minutes or until fragrant.
- Add your vegetables and cook for 2-3 minutes.
- Add your chicken and noodles.
- Add the sauce you made earlier. Mix it thoroughly together into the rest of the ingredients. Cook for 1 additional minute.
Notes
Omit the chicken to make this a vegetarian dish!
